It's not hard to spot a hop field. They are pretty distinctive, because the plants are grown in rows on strings. -What I'm doing now is breaking down the glands, the lupulin glands to release resins.
Inside the bracteal layer of female hop cones are wax-coated lupulin glands. they house a yellow pollen, which is made up of bitter resins and aromatic oils. Combined, these give hops their bitter flavor, when they're tossed into a steaming brew kettle and boiled.
-The bitter compounds, the resins, also have other influences. They help stabilize the foam. They are also antimicrobial, so they are important for preventing bacteria from growing in the beer.
After malt is added to warm water, and beer begins to brew. The mixture tastes very sweet. That's exactly when brewers add hops to balance the sweet taste with a little bitterness. They create a more harmonious flavor. Like most breweries, Anheuser-Busch uses a form of crushed or dried hops.
-You see, we are in the hop room now. These are the hop pellets. You can see right now what a hop looks like when we use it.
The Sierra Nevada Brewery produces 750 barrels per year.
-Since we really focus and feature hops in our beer, hops really are the most critical ingredient for us.
In fact, they grow three acres of their own hops.
-We have been growing our hops here at the brewery for the last four years.
