The word yeast comes from the old English word meaning bubble, boil or foam. Fitting that it is an essential ingredient in one of the world’s favorite frothy drinks.
The last big step in making beer is fermentation, a process that many say is where the magic happens. Sugars from the malt are metabolized into alcohol, a natural process that occurs completely on its own. It is an act of nature that has mystified people since the beginning of the time.
A fermentation process is like something otherworldly because it just happens by itself. You can’t see the yeast. Things are bubbling and churning and so forth. That was incorporated into the religion.
So how in the world is the process of fermentation triggered by yeast cells?
Molecules of/glucose or sugar enter the yeast itself through diffusion. The yeast breaks down the sugar, which in turn supplies more energy to the yeast, allowing it to continue to reproduce and convert the remaining glucose molecule into carbon dioxide and ethanol, the alcohol in beer.
